We have rolled out Winnow's Yield Optimisation System to our strategic sites in the UK to help us reduce waste and improve the sustainability of our operations.
An initial pilot significantly reduced waste within months. As we rolled out the system to sites across London, the results multiplied and today average waste is down over 50% from the start point.
Service quality remained at high standards but with a lower level of food wastage. An average of 15 tonnes per year per site less food wasted, which equates to over 10,000 plated meals per annum - significant financial savings for our clients and a lower environmental impact.
Staff engagement at these sites increased, with staff being empowered to identify opportunities that deliver quick results. The Winnow system provides regular data to our management team, which is then shared daily with staff to track the impact they are having on food waste and sustainability

The journey to the next level of service, we offer more than just a lunchtime coffee we offer a whole new experience. In one of our London operations we have 17 Micro-Kitchen [MK] pantries situated around the buildings. Each MK’s offers coffee, but in subtly different ways, from push button bean to cup, self-serve barista, or simply high quality filter.
We offer full barista training for every member of the catering team. This sets a standard. Regular training (via our fully engaged suppliers & employee learning platform) ensures that the end product is always at its best.
Where we step it up a notch is we also train our customers to be barista’s. We don’t have to, but we do. Currently over 920 people in the office of 2000 are trained baristas!

One of the many ways we are implementing our commitment to our customers, clients and staff is through the 'Go Figure!' concept we introduced in early 2015 across our employee dining restaurants. This concept offers customers a perfectly portioned, nutritionally balanced dish of up to 500 calories. With striking marketing and simple messaging, this concept rivals anything on the high street.
One of our clients, an international law firm, introduced this concept in June 2015 to their healthy food counter at lunchtime, and sales grew by 77%.
